Carrot Cake Bliss Balls

Carrot Cake Bliss Balls

DIFFICULTY LEVEL: Beginner

SERVES: 18

PREP: 20 mins (+ 30 mins in freezer)

Equipment: High-speed blender/Stick-blender

INGREDIENTS:

1 cup (110g) rolled oats

½ cup (80g) pepitas

120g Medjool dates (6), pitted

150g grated carrot (1 large)

¼ cup (35g) sultanas

1 ½ tsp ground cinnamon

2 tbsp (40ml) fresh orange juice

White or dark chocolate to drizzle on top (optional)

METHOD:

  1. Place oats and pepitas in a high-speed food processor and process until meal consistency is reached.

  2. Add the rest of the ingredients and process until well combined.

  3. Roll into small balls and place onto a tray lined with baking paper.

  4. Freeze for 30 mins then drizzle with melted white chocolate (optional).

    Storing leftovers: Serve immediately, store in the fridge for 10 days or freeze for up to 4 months.
