Protein Choc Crunch Bars

INGREDIENTS:
Base:
¾ cup (75g) oats
2 tbsp (60g) raw honey
½ cup (150g) peanut butter
¼ cup (30g) protein powder of choice (I used vanilla protein powder)
Choc Crunch:
150g melted dark chocolate (>70%)
1 tbsp (20g) coconut oil
1 cup (16g) brown rice puffs
METHOD:
To make the base layer, add oats to your high-speed blender and blend until it reaches flour consistency.
Add the rest of the ingredients and blend until you get a smooth dough.
Press dough evenly into a loaf tin lined with baking paper.
Melt chocolate and coconut oil in a bowl over hot water.
Once melted, mix with brown rice puffs.
Spread the chocolate mix evenly on top of the first layer.
Freeze for 30 mins, then slice into bars.
STORING LEFTOVERS: Serve immediately or store in an airtight container in the freezer for up to 6 months.
