Chocolate Crunch Bar

Packed with protein, a great source of fibre, and naturally sweetened with raw honey, they’re the perfect way to fuel your little one without any complaints! These bars are also a supercharged snack for any parent juggling work, lift schemes and a demanding schedule.  They’re super quick to make and last up to 6 months in the freezer! Plus, they’re versatile! Swap the peanut butter for a nut butter, seed butter, or tahini to make them lunchbox-friendly and allergy-safe! Your kids will be begging for more of these, and the truth is, so will you!

Chocolate Crunch Bar

ALLERGENS: Nuts

AGE GROUP: 12 months+

DIFFICULTY LEVEL: Beginner

SERVES: 14

PREP: 15 mins (+30 mins freezing)

INGREDIENTS:

Base: 

¾ cup (75g) oats

2 tbsp (60g) raw honey

½ cup (150g) peanut butter

¼ cup (30g) protein powder of choice (I used vanilla protein powder)

 

Choc Crunch: 

150g melted dark chocolate (>70%)

1 tbsp (20g) coconut oil

1 cup (16g) brown rice puffs

METHOD:

  1. To make the base layer, add oats to your high-speed blender and blend until it reaches flour consistency.

  2. Add the rest of the ingredients and blend until you get a smooth dough.

  3. Press dough evenly into a loaf tin lined with baking paper.

  4. Melt chocolate and coconut oil in a bowl over hot water.

  5. Once melted, mix with brown rice puffs.

  6. Spread the chocolate mix evenly on top of the first layer.

  7. Freeze for 30 mins, then slice into bars.

STORING LEFTOVERS: Serve immediately or store in an airtight container in the freezer for up to 6 months.

TIPS:

  • Allergies:
    For a gluten-free version: Swap oats with gluten-free oats or quinoa flakes.

    For a nut-free version: Swap peanut butter with tahini or seed butter.

  • Easy ingredient swaps:
    Swap peanut butter for nut or seed butter of choice.
    Swap honey for maple syrup.
    Swap protein powder for cacao or additional oats.
    Swap brown rice puffs for puffed grain of choice.

Additional boosters:
Boost chocolate mix with crushed seeds or nuts for an extra crunch.
