INGREDIENTS:
1 cup (110g) oats
1 over ripe banana (150g), peeled
2 large eggs
½ cup (125ml) milk of choice
1-2 tbsp maple syrup (optional)
½ tsp (2.5ml) vanilla extract
½ tsp (2g) baking soda
Pinch of sea salt
½ cup (80g) dark choc chips 70%
METHOD:
Preheat oven to 180°C.
Place all ingredients except choc chips into a blender and blend until smooth.
Pour into an oven-proof dish and bake for 20-25 mins or until golden brown on top and choc chips have melted.
STORING LEFTOVERS:
Store in an airtight container in the fridge for up to 3 days or freeze for up to 4 months.
