Beetroot Date Balls with Chocolate Drizzle

PREP: 25 mins (+ 1 hour freezing)

EQUIPMENT: High-speed food processor

INGREDIENTS:

1 cup (240g) Medjool dates, pitted and chopped  

½ cup (80g) beetroot, peeled and finely grated  

1 ¾ cups (210g) seed meal  

1 cup (75g) desiccated coconut  

Topping: 

100g 70% dark chocolate, melted 

 

METHOD:

  1. Place dates and beetroot into a high-speed food processor and process until smooth.  

  2. Add rest of the ingredients and process until well combined. 

  3. Roll into small balls and place in the freezer. Leave to set for 1 hour.  

  4. Drizzle each bliss ball with dark chocolate and place in the fridge to set for approx. 10 mins. 

STORING LEFTOVERS:
Store in an airtight container in the fridge for up to 14 days or freeze for up to 4 months.

 

TIPS:

  • Prep tips: 
    To reduce prep time, press mixture into a baking dish and place in the freezer for 30 mins. Remove from the freezer, drizzle with chocolate and cut into little squares. 

  • Easy ingredient swaps: 
    Swap beetroot for carrot. 

  • Additional boosters: 
    Add 1-2 tbsp of hemp seeds, chia seeds or flaxseeds to the mix before processing. 
    Sweeten further with 1-2 tbsp of coconut sugar. 

  • Baby-friendly version: 
    Leave out the chocolate coating. 

  • For fussy eaters: 
    Make sure the bliss balls have a very smooth consistency.
