Choc Top Avocado Mousse

Choc Top Avocado Mousse

AGE GROUP: 12 months+

SERVES: 4

PREP: 10 mins

EQUIPMENT: High-speed blender

INGREDIENTS:

1 large ripe avocado (200g), peeled and pitted 

1 frozen ripe banana (100g) 

½ cup (125ml) coconut cream 

2 tbsp (20g) cacao powder 

1 tsp (5ml) vanilla extract 

2 tbsp (40ml) maple syrup 

 

Toppings (optional): 

80g dark chocolate (>70%), melted 

1/3 cup blueberries, rinsed 

1/3 cup coconut cream 

 

METHOD:

  1. Place all ingredients except toppings in a high-speed blender and blend until smooth and creamy.  

  2. Divide mousse between 4 small cups. 

  3. Top each cup with a layer of melted dark chocolate and place in the freezer for 10 mins to set. 

  4. Remove from freezer, then top with a dollop of coconut cream and berries. 

STORING LEFTOVERS:
Store in the fridge for up to 2 days or freeze in popsicle moulds for up to 4 months.

 

TIPS:

  • Prep tips: 
    Alternatively, serve chocolate mousse in layers with coconut cream and berries. 

  • Easy ingredient swaps: 
    Swap blueberries for berries of choice. 
    Swap coconut cream for coconut yoghurt. 

  • Additional boosters: 
    Boost by adding a tsp chia seeds to the mix before blending. 

  • Baby-friendly version: 

    Leave out maple syrup and toppings.
