Hidden Veggie Choc Smoothie

Finding a chocolate smoothie that fussy little ones will enjoy without a fuss can be a challenge! That’s why I created this creamy, chocolatey smoothie packed with hidden veggies – a perfect option for kids who need extra fibre and healthy fats to stay satisfied and energised throughout the day. Not only is it a win for kids, but it’s also ideal for busy parents looking for a natural energy boost.

I’ve left out banana, as many children I work with struggle with constipation, and instead packed in fibre-rich cauliflower, zucchini, and dates to keep things moving smoothly. This delicious smoothie is a simple, tasty way to support healthy digestion for the whole family!

Hidden Veggie Choc Smoothie 

Dietary:  V, VEG, GF, DF, EF

Allergens: Nuts

Age group: 8 months +

Serves: 2

Prep: 5 mins

Equipment: High-speed blender

Ingredients:

3 Medjool dates (40g), pitted 

1 cups (250ml) coconut milk

1 cup frozen cauliflower

¾ cup zucchini, rinsed and cubed

1 tbsp (20g) almond butter

½ tbsp (5g) cacao powder

½ tsp (2.5ml) vanilla extract

Optional add-ins:

½ ripe banana, to sweeten further

1 tbsp (20g) kid-friendly protein powder

Method:

  1. Place all ingredients in a blender and blend until smooth and creamy.

  2. Divide mixture into 2 cups and enjoy ( or pour into popsicle moulds and freeze for later).

Storing and leftovers:  Serve immediately. Store leftovers in an airtight container in the fridge for up to 24 hours or freeze in ice popsicle moulds for up to 4 months.

 

Tips: 

  • Prep tips: 
    Pour any leftover smoothie into popsicle moulds and freeze for an after-school snack. 

  • Allergies: 

For a nut-free version, Swap nut butter for tahini or seed butter of choice, or leave it out.  

  • Easy ingredient swaps: 
    Swap almond butter for peanut butter.

    Swap dates for frozen banana.

    Swap zucchini for pumpkin.
