Homemade Almond Milk

It's surprisingly easy and allows you to control the ingredients and customize the flavour to your liking. With just a few simple steps, you can create a creamy and nutritious dairy-free alternative right in your own kitchen. By soaking almonds overnight and blending them with water and optional sweeteners or flavourings, you'll have a fresh batch of homemade almond milk ready to enjoy.

Homemade Almond Milk - Mandy Sacher

DIETARY: VEG, EF, V, GF

ALLERGENS: Almonds

AGE GROUP: 8 months+

SERVES: 3-4

PREP: 10 mins (+12-14hrs soaking time)

EQUIPMENT: High-speed food processor, Hand-held blender or Blender

INGREDIENTS:

1 cup (160g) raw almonds

3-4 cups (750mls - 1 Litre) less water will make it thicker

Optional ingredients: 

2 dates, pitted

1 vanilla pod

METHOD:

  1. Soak almonds in a bowl covered with filtered water for 12-14 hrs.

  2. Rinse and drain almonds and then place into a blender along with the filtered water.

  3. Blend for 3-5 mins until smooth and creamy.

  4. Place a nut milk bag or thin tea towel over a large bowl and slowly pull the almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk.

  5. If using a tea towel, carefully gather the corners and lift up. Then squeeze until all of the liquid is extracted.

  6. Transfer milk to a jar or covered bottle and refrigerate.

  7. Shake well before drinking as it tends to separate.

STORING LEFTOVERS:
Serve immediately or store in the fridge for four days or freeze for up to four months.

 

TIPS:

  • Allergies:  

    For a nut-free version: Swap almonds for shredded coconut, sunflower or hemp seeds.

  • Easy ingredient swaps:  

    Swap almonds for macadamia or cashew nuts for an extra creamy dairy alternative.

  • Additional sweeteners:
    Add any of the following ingredients before blending to sweeten further: 2 medjool dates, stevia, monk fruit, manuka honey.

  • Additional flavours:

    Add any of the following ingredients to enhance the flavour: cinnamon, vanilla pod, cacao or carob powder.
