Cheesy Chicken & Broccoli Patties

Cheesy Chicken & Broccoli Patties

COOK: 30 mins

INGREDIENTS:

500g chicken mince

100g broccoli, steamed

1 egg

½ cup (50g) grated cheese

3 tbsp (65g) rice breadcrumbs

1 tsp (3g) garlic powder

Sea salt and pepper, to taste


Extra virgin olive oil, for cooking

METHOD:

  1. Preheat the oven to 180°C and line a baking tray with baking paper.

  2. Mash steamed broccoli in a large bowl using a fork or potato masher.

  3. Add the rest of the ingredients and stir to combine.

  4. Shape the mixture into small nuggets and place them onto the baking tray.

  5. Drizzle with some oil and bake in the oven for 30 mins or until golden brown.

  6. Serve with a homemade dip of choice.

STORING LEFTOVERS: Serve immediately, store in a cool, dry spot in an airtight container for up to 3 days, refrigerate for 10 days, or freeze for up to 4 months.

TIPS:

  • Allergies:
    For a dairy-free version: Omit cheese.

    For an egg-free version: Swap egg for a store-bought egg replacer or use a flax egg (1 egg = 1 tbsp flaxseed meal + 3 tbsp water) or chia egg (1 egg = 1 tbsp chia seed meal + 3 tbsp water).

  • Easy ingredient swaps:
    Swap broccoli for cauliflower.
    Swap chicken mince for turkey mince.

  • Additional boosters:
    Boost patties with a tablespoon of chia seeds.

  • For fussy eaters:
    Make sure the beans are processed very smoothly. 

  • Baby-friendly version:

    Serve mashed or in finger food-sized pieces.
