INGREDIENTS:
500g chicken mince
100g broccoli, steamed
1 egg
½ cup (50g) grated cheese
3 tbsp (65g) rice breadcrumbs
1 tsp (3g) garlic powder
Sea salt and pepper, to taste
Extra virgin olive oil, for cooking
METHOD:
Preheat the oven to 180°C and line a baking tray with baking paper.
Mash steamed broccoli in a large bowl using a fork or potato masher.
Add the rest of the ingredients and stir to combine.
Shape the mixture into small nuggets and place them onto the baking tray.
Drizzle with some oil and bake in the oven for 30 mins or until golden brown.
Serve with a homemade dip of choice.
