Homemade Twix Bars

INGREDIENTS:
BASE:
1 ¼ cups (160g) almond meal
½ cup (60g) coconut flour
1/3 cup (80ml) maple syrup
½ cup (125ml) almond milk
CARAMEL:
1/3 cup (95g) almond butter
6 Medjool dates (110g), pitted
2 tbsp (40ml) maple syrup
2 tbsp (40ml) coconut oil, melted
2 tbsp (40ml) filtered water
½ tsp (2.5ml) vanilla extract
Pinch sea salt
CHOCOLATE:
200g dark chocolate, melted
2 tbsp (40ml) coconut oil, melted
METHOD:
Preheat oven to 180°C and line a baking dish (20x20cm) with baking paper.
In a small bowl, add all base ingredients and stir to combine.
Press mixture evenly into prepared baking dish, flattening down with a spatula or the balm of your hands. Bake in the oven for 10-15 mins or until the sides are turning golden brown. Allow to cool.
For the caramel, add all ingredients into a high-speed food processor or blender and process until smooth and creamy. If your dates are quite hard, soak them in hot water for 10 mins beforehand, then drain and use.
Pour the caramel on top of the base, smoothing out with a spatula. Freeze for 5-6 hours or overnight.
Cut into approx. 40 thin rectangular slices.
Melt chocolate and coconut oil in a bowl.
Dip each slice into the chocolate and place back on the baking dish.
Place back into the freezer until chocolate has hardened. Enjoy!
STORING LEFTOVERS: Store in the fridge for up to a week or in the freezer for up to 6 months.
