Vanilla Thick Shake with a hidden Twist
Introducing my delightful Healthy Vanilla Thickshake with a Hidden Twist! This delicious smoothie is not just a creamy vanilla dream, but it also has a sneaky ingredient that's perfect for your little ones – frozen zucchini! This innovative twist adds a nutritious boost to the classic thickshake, while remaining completely undetectable to those young, picky taste buds.

INGREDIENTS:
1 large ripe frozen banana
1 cup frozen peeled zucchini pieces
¼ cup cashew nuts, soaked in hot water for 10 mins
½ cup Greek yoghurt
¼-½ cup filtered water
2 tbsp rolled oats (or vanilla protein powder)
2-3 Medjool dates, pitted
1 tsp vanilla extract
Toppings (optional):
Whipped coconut cream
Pink pitaya powder, to sprinkle on top
METHOD:
Place all ingredients into a high-speed blender and blend until smooth and creamy.
Fill into 2 glasses and pipe a swirl of whipped coconut cream on top (optional). Sprinkle with pink pitaya powder (optional).
STORING LEFTOVERS:
Store in an airtight container in the fridge for up to 24 hours or freeze in popsicle moulds for up to 4 months.

Prep tips:
To make whipped coconut cream, place a can of full-fat coconut cream in the fridge overnight. Scoop out the white part only and discard the liquid part (or use in the thick shake). Whip the white thick part with an electric whisk until fluffy. Sweeten with a pinch of stevia and vanilla extract.Allergies:
For a dairy-free version: Swap Greek yoghurt with coconut, soy or oat yoghurt.
For a gluten-free version: Swap oats with quinoa flakes.
Easy ingredient swaps:
