Child Friendly Chocolate Date Bark

Introducing my kid-friendly version of the mouthwatering viral sensation that's taking the culinary world by storm: Chocolate Date Bark! This delectable recipe combines the rich, velvety goodness of chocolate with the irresistible taste of peanut butter, all atop a sweet and chewy date base. With its enticing blend of flavours and textures, this viral sensation is the perfect treat for any occasion, whether you're satisfying your sweet tooth or impressing your friends and family with a delightful homemade dessert.

AGE GROUP: 12 months+

SERVES: 20

PREP: 20 mins (+30-40 mins freezer)

EQUIPMENT: High-speed food processor

INGREDIENTS:

18-20 soft Medjool dates (250g), pitted 

1/3 cup crushed peanuts  

1/3 cup (80ml) smooth peanut butter  

100g melted 70% dark chocolate 

METHOD:

  1. Line a small shallow baking tray with baking paper. 

  2. Place dates and peanuts into a food processor and process until smooth. 

  3. Press mixture evenly into the lined baking tray, using a spatula or oiled hands. 

  4. Drizzle peanut butter on top and use the spatula to spread it evenly across the date mix. 

  5. Drizzle half the melted chocolate over the peanut butter and spread it all over until it is completely covered. 

  6. Place the baking tray in the freezer for 20-25 mins or until chocolate has set. 

  7. Remove from the freezer then flip the date bark over and cover the other side of the date mixture with a layer of melted chocolate. Spread out evenly and place back in the freezer for chocolate to set. 

  8. Once chocolate has set, cut into bites or use cookie cutters to cut out funny shapes. 

STORING LEFTOVERS:
Store in an airtight container in the fridge for up to 14 days or freeze for up to 4 months.

 

TIPS:

  • Allergies: 

    For a school-friendly version: Swap peanut butter for tahini and peanuts for pumpkin seeds. 

  • Easy ingredient swaps: 
    Swap peanut butter for nut butter of choice. 
    Swap peanuts for rushed nuts or seeds of choice. 

  • Additional boosters: 
    Boost the date mixture with 1 tbsp of chia seeds. 

  • For fussy eaters: 
    Make sure everything has a smooth consistency.
