Pizza French Toast Fingers

EQUIPMENT: High-speed food processor

INGREDIENTS:
8 slices of wholemeal toast  

1/3 cup (80ml) tomato passata 

2 tsp (4g) dried oregano 

1 cup (120g) grated mozzarella 

2 eggs 

¼ cup cauliflower puree  

Pinch of sea salt and pepper 

 

Extra virgin olive oil or unsalted butter, for frying 

METHOD:

  1. Cut the crusts off the bread. 

  2. Spread each slice with ½ tbsp of passata and sprinkle with oregano. 

  3. Add grated cheese and top with another piece of toast, pressing down with your hands to seal. Cut into two fingers. 

  4. Whisk together eggs and cauliflower puree in a bowl. 

  5. Carefully dip pizza fingers into the egg mix. 

  6. Heat a little oil or butter in a frying pan and add fingers. Cook from both sides for 2-3 mins. 

  7. Enjoy! 

MANDY’S SERVING SUGGESTION: 
Serve pizza fingers with homemade tomato sauce. 
 
STORING LEFTOVERS: Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 4 months.

    For a dairy-free version: Swap grated cheese with a dairy-free alternative or omit. 

    For a gluten-free version: Swap wholemeal toast with gluten-free toast. 

    For an egg-free version: Swap egg for a store-bought egg replacer.

    Swap cauliflower for pumpkin, sweet potato or parsnip puree. 
    Swap cauliflower puree for milk.
