PB & Date Nice Cream

Looking for something sweet, creamy and delicious to satisfy the kiddie’s cravings for ice cream? Look no further! Introducing my heavenly homemade PB & Date Nice Cream! Made with just frozen bananas, luscious Medjool dates, creamy coconut cream, and a generous dollop of peanut butter, this delightful and nourishing frozen dessert is perfect for the whole family! Plus, it's refined sugar-free, dairy-free, egg-free, and vegan! Indulge in a bowl of pure goodness that's yummy and nourishing!

Pb & Date Nice Cream

DIETARY: V, VEG, GF, EF, DF

ALLERGENS: Nuts

AGE GROUP: 12 months+

PREP: 10 mins

 

INGREDIENTS: 

2 frozen ripe bananas (320g) 

2 tbsp peanut butter (60g) 

1-2 tbsp coconut cream (30-60g) 

4 Medjool dates (90g), pitted and finely chopped 

Pinch of sea salt (optional) 

 

Optional toppings: 

Melted dark chocolate 

Chopped pecans or nuts of choice 

Frozen or fresh berries 

  

METHOD:

  1. Place all ingredients into a high-speed blender and blend until smooth and creamy. 

  2. Serve immediately with a drizzle of melted dark chocolate, chopped pecans or berries (optional).  

STORING LEFTOVERS: Store in an airtight container in the freezer for up to 4 months.

 

 TIPS: 

  • Prep tips: 
    Alternatively, if you want your ice cream more frozen, place the nice cream into an airtight container, freeze for 2-3 hours and scoop out serves.

    I recommend freezing ripe bananas the day before as the store-bought frozen bananas have less flavour and sweetness. 
    If your dates are quite hard, soak them in hot water for 10 mins, then drain before using them. 

  • Allergies: 
    For a nut-free version: Swap peanut butter for tahini or seed butter. 

  • Easy ingredient swaps: 
    Swap peanut butter for nut-butter of choice. 
    Swap coconut cream for normal cream or milk of choice.

  • For fussy eaters: 
    Make sure the dates are not detectable or use 1-2 tbsp of maple syrup or honey instead of the dates.
